I bet you never thought to cook your sweet potatoes like this…

Did you know I never ate or even tried sweet potatoes until I was in my twenties?

What’s crazy about that statement? Now, I consider sweet potatoes a staple food item.

In fact, I use it so frequently, that I’m about to give it the boot.

Up until recently it’s always been a baked sweet potato with butter or cinnamon, or sliced sweet potatoes that have been baked with olive oil and salt. Both are good, but both have sort of worn out their welcome on my dinner plate.

I needed a sweet potato REVOLUTION! Something that made me want to have it on my plate again, something that was different and even disguised!

So, I began digging and experimenting, and what I found has changed my view of sweet potatoes.

Enter my two new ways of incorporating sweet potatoes into my family dinners…

Sweet Potato NOODLES…Yes. NOODLES!

This first idea basically came from an accident. I was reading a recipe book about making noodles from what I THOUGHT was a sweet potato. So I tried it! (If you’re wondering… it was actually a carrot in the recipe book… hmmm, maybe I’ll try that later too!)

Step 1: Peel the sweet potato skin off and discard. Continue to peel the sweet potato making long wide noodles with each stroke. Store sweet potatoes in water until ready to use.

Step 2: Melt butter in a pan over medium heat. Add in some garlic, and after 2 minutes toss in as many sweet potato noodles as you’d like. Remember that they cook down, so put more than you think. Place the lid on and allow to simmer.

Step 3: After 5-7 minutes remove the lid and stir. Noodles should be limp but NOT mushy.

YUM! Salt generously and add to your favorite dish!

I served my sweet potato noodles topped with chicken and yogurt sauce and a side of baked broccoli and mushrooms. Again… YUM!

Oh… and how’d I prepare that chicken and where did I get that yogurt? I’m so glad you asked…

Spicy Sweet Potatoes

When I was preparing for my second baby, I worked to put frozen meals in the freezer as times savers after giving birth.

One meal I came across was a spicy turkey chili with sweet potatoes.

I had moderate hopes for the dish, but soon found out the spicy chili flavors worked wonderfully with the sweet vegetable. Since then, any time I have a spicy dish, I try to find a way to work my potatoes in!

Step 1: Peel and cube sweet potato.

Step 2: Place frozen chicken, sweet potatoes, chopped peppers, diced tomatoes, and chili seasoning in your crock pot.  Set for 4 hours on low.

Step 3: After 4 hours, shred chicken.  Serve in a bowl like a chili, or spread on a tortilla and eat with your favorite taco toppings.

    Spicy Sweet Potatoe Fries

    Oven 375

    Peel sweet potatoes and cut into fries. Coat with grapeseed oil, chili powder, cumin, garlic powder, salt and pepper (all to taste)

    Bake til golden brown!
