Recipe for Raw Sweet Treats!

Don’t judge a book by its cover!  In other words, don’t be totally repulsed by the title of this blog post.  “Raw Sweet Treats” may conjure up images of uncooked goo; but in fact, these recipes are quite yummy!

As detailed in a previous post, “Raw” food falls into a very specific eating lifestyle.  Nothing is cooked over 118 degrees.  This ensures that none of the food’s original vitamins and minerals are lost during the cooking process.

I have tried several different raw dishes…some main courses, some sides, and some desserts.  The two recipes that I’m going to share with you today are desserts.  They are the best tasting raw recipes that I have found yet!

So get excited, because you can eat as much of these treats as you’d like, and you’re actually doing your body a service!  They taste good, they’re SO good for you, and they’re super quick to whip up!

Freezer Cookies

Ingredients:

  • 2-3 tbsp raw honey
  • 1 tbsp raw peanut or almond butter
  • 3 tbsp coconut oil
  • ¼ cup carob or cocoa powder
  • ½ cup ground almonds
  • ¾ cup unsweetened, shredded coconut
  • ¼ oats

Instructions:

  1. Melt the honey, peanut/almond butter, and coconut oil in a saucepan over low heat.

  2. In a food processor, pulse remaining ingredients until blended.
  3. Combine wet and dry ingredients and mix together.

  4. Pour mixture onto a plate or small baking sheet covered with parchment paper.  Spread into a thin, even layer.

  5. When cooled, place in freezer for approximately 30 minutes.
  6. Cut into pieces and eat!

Truffles

Ingredients:

  • 1 cup almonds
  • ¾ cup dates
  • ½ cup raw almond milk
  • 1 tbsp cocoa powder
  • 2 tbsp agave nectar

Instructions:

  1. Put all ingredients into a blender and mix well.  Mixture will be thick and dough-like.

    I’ve got all my my raw ingredients in the food processor.

    Now it’s all blended.

     

  2. Form into small balls and freeze.

    Shaped into balls and ready for the freezer!
