Do you shop at Publix?
Well, I don’t mean to be free advertisement here, but you should. Besides the fact that they are the cleanest store you could ever go to, with incredible customer service, they also have hired sweet old grandmothers to come in twice a week and basically cook an entire meal to give away as samples. I’ve literally received a sample with salad, meat, a side and a dessert. Seriously. They are the best.
This week, the sweet old lady whipped up some salmon and smashed cauliflower. As someone who gets stuck in the cauliflower pizza dough or cauliflower rice rut (don’t get me wrong, those are wonderful ruts), it was nice to see cauliflower actually being cauliflower and tasting awesome at the same time.
So, I immediate snatched a recipe card, and trolled around the store for the extra ingredients needed to make this incredible dish at home.
The recipe that follows is not exactly like the Publix one. I took the culinary liberty of not microwaving my cauliflower, and instead steamed it in chicken broth. I think you’ll thank me for that one, kinda a no brainer there.
This recipe is WHOLE FAMILY approved!
Note: When I say “Whole Family”, I’m including everyone outside of the picky 3 year old who doesn’t eat ANYTHING healthy unless bribed with a cookie. But the 21 month old thinks it’s a winner. Just thought I’d clarify. 🙂
Ingredients:
1 head of cauliflower
2-3 cups chicken broth
salt to taste
2 -3 tsp of fresh cilantro, chopped finely
2 tbsp. Sundried Tomato Spread
1/2 cup Avocado Lime dressing
Directions:
- Trim florets off head of cauliflower.
- Boil chicken broth, and place florets in broth to steam/boil. Cover pot with lid until tender.
- Drain florets and place back in pot.
- Add in butter, tomato spread, and avocado lime dressing. Mash with fork or potato masher.
- Stir in cilantro and salt to taste.
- ENJOY!
I hope you enjoy this recipe as much as we did! I’ve only been cooking it a week, and we’ve already eaten it for four meals… so… it’s good. And a refreshing recipe for cauliflower burn out.
