It’s true…the word “perfect” is no exaggeration! This method for grilling truly does produce the juiciest, most perfect chicken my tastebuds have ever experienced!
After years of trying different recipes and methods, I have finally come across my fail-proof, go-to recipe for grilling chicken. And what a lifesaver this has been! I live with some serious grilled-meat-eating machines…to be able to serve them up something exceptionally tasty off the grill has been so rewarding!
So, no more dried-out chicken for my family! No more frantic recipe searches for me! Now we can just grill, relax, and eat. 🙂
This grilling method is so easy you’re not going to believe it. It takes very little prep and only three ingredients. The only thing that you need to prepare for is a longer grilling time than usual.
Perfect Grilled Chicken
Ingredients:
- Bone-in, skin-on chicken breasts
- Olive oil
- Salt
- Pepper
Directions:
- Heat a large pile of charcoal.
- While charcoal is heating, rub chicken with olive oil, salt and pepper. Loosen skin and rub underneath as well.
- Once the coals are grey, shape them into two long mounds down both sides of your grill. Allow to cool for a few minutes.
- Place chicken breasts in a row between the two mounds of coals. The chicken should not be placed over any coals.
- Shut the lid, and grill for thirty minutes. Do not open even if you are tempted!
- After thirty minutes, flip the chicken and cook for another thirty minutes. Once again, no peeking!
- Remove the chicken, and prepare to be amazed!
The second you start peeling the skin back, you will become an instant believer in this recipe. The combination of slow cooking over indirect heat, using chicken with the skin and bones still intact, and rubbing with olive oil will guarantee you the chicken of your dreams!
I love how many possibilities there are to use this chicken, too! We have made barbecue sandwiches, casseroles, even Indian food with this wonderful recipe!
